This is one of our favourite sauces, one that gets made (and tweaked) every year. Ginger has it’s own heat, so blends perfectly and adds depth to the heat from Habanero, Fatali and Scotch Bonnet. We use orange juice, tangerines and artisanal white balsamic vinegar (the tweak this year) to balance it all out for a citrusy sauce with a good deal of heat and nice sweetness on the front.
